Çiğköfte (Without Meat)

Ingredients for Çigköfte (Meatless) Recipe

  • 2 cups of brown bulgur with meatballs (white bulgur can also be used)
  • 1. 5-2 glasses of boiling water
  • 1. 5 tablespoons of pepper paste
  • 1. 5 tablespoons of tomato paste
  • 1-2 tablespoons of isot
  • 1-2 tablespoons of chili flakes
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 teaspoon allspice
  • 1.5 teaspoons salt
  • 1 medium onion
  • 3-4 garlic cloves
  • 1 tea glass of olive oil
  • half a tea glass of pomegranate syrup
  • a pinch of parsley

How to Make Çiğköfte (Meatless) Recipe?

  1. Let’s wet our bulgur with boiling water and cover it so that it swells well.
  2. While the bulgur is soaking, grate the onion and garlic and squeeze out the juice , we need the pulp.
  3. In a bowl, let’s combine tomato paste, spices, olive oil, pomegranate syrup and grated onion. You can increase the isot and chili pepper according to your hot desire.
  4. Let’s chop the parsley finely.
  5. It’s time to knead:) Let’s add all the ingredients except the parsley to the swelling bulgur and start kneading. If you used brown bulgur, the kneading process will take a very short time.
  6. When the firmness of the bulgur decreases, let’s add the parsley and knead a little more.
  7. We can control its taste and freshness and shape it. The size I gave is ideal for four of us.
