Ingredients for the Original Çiğköfte Recipe

  • 5 tea glasses of bulgur for meatballs(thin bulgur with brown raw meatballs)
  • 200 grams of raw meatballs

  • Green onions

  • Cumin, black pepper, salt, chili flakes ,
  • 2 tablespoons of pomegranate syrup
  • 3 -4 tablespoons of olive oil
  • 1 teaspoon granulated sugar
  • 1 tablespoon of tomato and pepper paste

How to Make the Original Çiğköfte Recipe

  1. Let’s wet a small bowl of isot. Let’s leave the other spices on the isot according to taste and let them get wet together.
  2. Chop the green parts of the green onions into small pieces, and chop the parsley too.
  3. Chop the onion small. Let’s grate the garlic if possible.
  4. In a large meatball bowl, let’s take our bulgur and tomato paste, onion and garlic.
  5. Let’s cut a lemon into quarters with its rind and throw it in and all of them including the lemon.

  7. Let’s knead dry without taking any water, let’s take the soaked isot slowly and knead it together.
  8. In the meantime, let’s wet our hands and continue to knead.
  9. When our meatballs are soft, let’s add our meat. Let’s knead them all together until our meatballs stick to the tray.
  10. Let’s take a helper with us and add water when necessary, after we eat them well, add our greens and knead again for a minute or two.
  11. Add pomegranate syrup and oil. Let’s knead once more and make small meatballs with our hands and arrange them on the plate. Those who love it can also eat it with lavash bread.
